This easy, 15 minute meal has only 420 calories, serves 4, and includes 31g protein!
Ingredients:
- 1 small shallot, finely chopped
- 1/4 cup mayonnaise
- 3 tablespoons sour cream
- 3 tablespoons line juice
- 2 tablespoons orange juice
- 1 pound cooked shrimp, chopped
- 1 cup grade tomatoes, halved
- 1 serrano chile, thinly sliced
- 2 ripe avocados, halves, pits removed
- Cilantro for garnish
- Sweet potato chips for serving
Directions
- In a small bowl, whisk shallot, mayo, sour cream, lime juice, orange juice and 3/4 teaspoon of salt.
- In a large bowl, toss shrimp, tomatoes, chile, and half of dressing. Refrigerate for 20 minutes - 2 hours.
- To serve, spoon into avocado halves and drizzle with remaining dressing. Garnish with cilantro and serve with sweet potato chips.
