Sautéed Shrimp with Tomatoes and Garlic

  • 2 tablespoons olive oil
  • 3 cloves garlic, sliced
  • 3 small shallots, thinly sliced or diced
  • Sea salt and pepper, to taste
  • (1) 14oz can of Red Gold diced tomatoes, undrained
  • 1/4  cup chicken stock
  • 2 tablespoons lemon juice
  • 1/2 teaspoon sugar
  • 15-18 full sized shrimp (she cooked with heads and shells on!)
  • Pinch of red pepper flakes



  1. In a large saute pan over medium heat, add the oil and shallots
  2. Saute until shallots are soft, about 5 minutes
  3. Add the garlic and tomatoes, saute on medium heat for 3 minutes
  4. Add the stock, lemon juice, salt, pepper, and sugar
  5. Stir to combine
  6. Add the shrimp and cook for 2-3 minutes, flip each one and cook an additional 3 minutes (will turn pink)
  7. Remove from heat, toss together, and serve over cooked rice!
